Low Fat Fish Cakes
Home made fish cakes are far tastier than the shop bought varieties, plus you know that they aren’t packed with stabilizers, e-numbers and any other rubbish, just bread and vegetables and fish! They are also great to make in large quantities, freeze and cook at a later date. They are also customizable; if you dislike one type of fish then just use another, or you can put mash potato in them (instead of bread), which holds them together really nicely but isn’t as low fat.

Ingredients
- Sea Bass (1 fillet) - other fish if you desire
- 3 slices of bread
- 1 egg
- 1 tbsp milk, non fat
- 3 stalks celery
- 1 onion
- 3 colves of garlic
- 1 tsp olive oil

Method
1. Finely chop your celery, onions and garlic and sauté them together until they look ‘glassy’.
2. Toast and dice your bread.
3. Cook your fish preferably by steaming it for about 10 mins. Once it is cooked, flake it and add to the vegetables, the egg, milk, bread and spices as desired.
4. Divide the mixture and pat it into small ‘cakes’.
5. Dust the cakes with a small amount of flour then place in the fridge for 1 hour to firm up.
6. Pan fry in cooking spray or small amount of oil for about 3-4 mins either side or until crisp.
Tip: Add a splash of hot sauce and lime into the mixture for an extra kick!
